Ethimo is a Greek restaurant in the centre of Nicosia, a few steps from the THOC theatre on Vasileos Pavlou. The cooking is honest and ingredient-led: pure produce, herbs and extra-virgin olive oil, with a menu that changes each season and a wine list built around Greek and Cypriot labels. We are a small team in a dining room that is usually full. We look for people who take pride in good food and warm service, and who want to grow with a young restaurant.
